Let’s get practical. This class provides the knowledge and resources for trying out a new way of eating. By using the tools provided, participants often experience better blood sugar levels, weight loss if needed, and other health benefits within a surprisingly short time. The Power Plate is a diagram that illustrates the essential food groups: vegetables, whole grains,
legumes, and fruits. From these groups, you will be assisted to create your own Weekly Meal Planner and learn how to navigate the grocery store to find the treasures (and avoid the troublemakers!). We’ll discuss common concerns, including how to prevent and treat low blood sugar for those taking certain medications, and how to ease your transition into a filling, high-fiber way of eating. Taste some of the staples that you’ll want to bring home from your grocery store.

Eating out and ordering in meals can be a challenge if you are trying to eat plant-based. But, with a little planning it’s easier than you think. Join RSS Dietician Maudene Nelson as she goes through how you can keep to eating plant-based when you don’t want to cook.
Let's Talk Vegetables: Spring Radishes and Mint (online & in-person)

Radishes are popular for their pungent roots. The leaves are also edible, and the plants serve a variety of helpful purposes for farmers. There are many types of radishes – we’ll be focusing on the spring (sometimes called, European) radishes, but we’ll briefly cover winter and other radishes.
Mint – there are so many types of mint beyond spearmint and peppermint. This beloved herb is popular throughout the world for its flavor and fragrance. We will explore culinary uses for mint. For those who enjoy gardening, we will touch on growing mint too.
Join Let's Talk Vegetables (LTV) this month to learn more about radishes and mint. Each LTV presentation starts with some information about GrowNYC, our Greenmarket farmers markets, and what is currently in season. We will then focus on this month’s featured vegetables including historical information, nutritional information, growing these veggies in the NY area, and trivia.

Cooking with fresh vegetables is great but not always convenient or available. However, you always want to make sure that you have vegetables on hand to make a quick meal. RSS Dietitian, Maudene Nelson, will explain the differences between fresh, frozen and canned vegetables so you can be prepared for your next meal.
After the lecture there will be plenty of time for to ask questions about eating and cooking plant-based meals, share your successes and challenges and get support for yourself and others on this journey of eating healthier.
