Ingredients:
- 1 1/2 cup canned beans or 1 cup cooked chickpea
- 1/2 red, green and yellow bell peppers chopped
- 1/2 red onion finely chopped
- 1/2 cup celery, chopped
- 1/4 cup carrots, finely chopped
- 1/4 cup vegan mayonnaise (I use soy-free vegenaise) OR hummus
- 1 medium tomato sliced (optional)
- 1 nuri sheet, crushed (for tuna flavor) (optional)
- salt & pepper to taste
Instructions:
- Chickpea - in a medium bowl smash into desired consistency with fork or masher
- Put it all together
- add in all ingredients except tomato
- mix well and serve on whole-grain toast or place in a veggie wrap.
- Top with 1 slice of tomato.
