Chickpea Salad on Toast

Ingredients:

  • 1 1/2 cup canned beans or 1 cup cooked chickpea
  • 1/2 red, green and yellow bell peppers chopped
  • 1/2 red onion finely chopped
  • 1/2 cup celery, chopped
  • 1/4 cup carrots, finely chopped
  • 1/4 cup vegan mayonnaise (I use soy-free vegenaise) OR hummus
  • 1 medium tomato sliced (optional)
  • 1 nuri sheet, crushed (for tuna flavor) (optional)
  • salt & pepper to taste

Instructions:

  1. Chickpea - in a medium bowl smash into desired consistency with fork or masher
  2. Put it all together
  3. add in all ingredients except tomato
  4. mix well and serve on whole-grain toast or place in a veggie wrap.
  5. Top with 1 slice of tomato.
