Ingredients (Serves 6): 1-2 tablespoons extra-virgin olive oil, 1 medium/ large onion, chopped, 2 teaspoons curry powder, ½ teaspoon ground cumin, 1 tablespoon tomato paste, 1 garlic clove, chopped, 6 cups water, 1 ½ cups red lentils sorted, checked, and rinsed well in a strainer, 1-2 tablespoons fresh lemon juice, Pinch cayenne (optional), Salt and pepper to taste
