Roasted Eggplant with Garlic

Ingredients:

  • 1 eggplant, cut crosswise into 1/2-inch slices
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon Italian seasoning
  • 1 teaspoon salt

Directions:

  1. Preheat the oven to 425 degrees F (220 degrees C).
  2. Line a baking sheet with parchment paper.
  3. Place eggplant slices in a single layer on the baking sheet.
  4. Drizzle with olive oil and sprinkle with garlic powder, smoked paprika, and Italian seasoning.
  5. Roast in the preheated oven until golden and crispy, about 25 minutes.
  6. Sprinkle with salt and serve.
