Black Bean Brownies

Ingredients:

  • 1 can (15 ounces) black beans, rinsed and drained
  • 1/2 cup semisweet chocolate chips, divided
  • 3 tablespoons canola oil
  • 3 large eggs, room temperature
  • 2/3 cup packed brown sugar
  • 1/2 cup baking cocoa
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon salt

Instructions:

  1. Place the beans, 1/4 cup chocolate chips, and oil in a food processor; cover and process until blended.
  2. Add eggs, brown sugar, cocoa, vanilla, baking powder, and salt; cover and process until smooth.
  3. Transfer to a parchment-lined 8-in. square baking pan. Sprinkle with remaining chocolate chips. Bake at 350° for 20-25 minutes or until a toothpick inserted in the center comes out clean. 
  4. Cool on a wire rack. Cut into bars.
