Kale, Avocado and Carrot Salad

INGREDIENTS

  • 1 bunch kale finely chopped
  • 2 cups grated carrots
  • 1 avocado
  • 1/4 cup thinly sliced red onion
  • 2 tbsp lemon or lime juice
  • 1 tbsp sesame seeds, toasted
  • 1/2 teaspoon reduced-sodium soy sauce
  • salt & pepper to taste

 

INSTRUCTIONS

  1. Toss all ingredients together in a large bowl. 
  2. Use your hands or the back of a large spoon to thoroughly mash avocado into kale. 
  3. Add salt and pepper to taste and serve.
