INGREDIENTS
- 1 bunch kale finely chopped
- 2 cups grated carrots
- 1 avocado
- 1/4 cup thinly sliced red onion
- 2 tbsp lemon or lime juice
- 1 tbsp sesame seeds, toasted
- 1/2 teaspoon reduced-sodium soy sauce
- salt & pepper to taste
INSTRUCTIONS
- Toss all ingredients together in a large bowl.
- Use your hands or the back of a large spoon to thoroughly mash avocado into kale.
- Add salt and pepper to taste and serve.
