Chickpea Salad

INGREDIENTS

  • 1 can no-salt-added garbanzo beans, drained and rinsed
  • 1 large cucumber, chopped
  • 1 cup broccoli florets
  • 1 cup cherry or gape tomatoes, halved
  • 1 cup finely chopped kale
  • 1/2 cup finely chopped red onion
  • 2 tablespoons finely chopped Kalamata olives
  • 3 tablespoons red wine vinegar
  • 1 clove garlic, minced
  • 1 tablespoon chopped fresh parsley

 

 

INSTRUCTIONS

Combine all ingredients in a large bowl. Chill and serve!
