INGREDIENTS
- 1 can no-salt-added garbanzo beans, drained and rinsed
- 1 large cucumber, chopped
- 1 cup broccoli florets
- 1 cup cherry or gape tomatoes, halved
- 1 cup finely chopped kale
- 1/2 cup finely chopped red onion
- 2 tablespoons finely chopped Kalamata olives
- 3 tablespoons red wine vinegar
- 1 clove garlic, minced
- 1 tablespoon chopped fresh parsley
INSTRUCTIONS
Combine all ingredients in a large bowl. Chill and serve!
