INGREDIENTS
- 1 tbsp extra-virgin olive oil
- 1 medium chopped yellow onions
- 3 - 5 garlic cloves
- 6 - 8 carrots chopped
- 2 - 4 teaspoons grated fresh ginger (adjust to your liking)
- 1/2 tsp turmeric powder
- 2 cups vegetable broth
- 1 tsp fresh thyme
- 1 tsp all-purpose seasoning (Umami used in this recipe)
- 1 1/2 cup water (preferably hot water)
- Sea salt and black pepper to taste
- 1 cup coconut milk
- Garnish with fresh parsley
INSTRUCTIONS
- Heat the olive oil in a large pot over medium heat.
- Add the onions stirring occasionally, about 5 minutes.
- Add the garlic, ginger, carrots, all-purpose seasoning, thyme, salt and pepper to the pot and cook about 8 minutes more, stirring occasionally.
- Add water, cover and simmer about 40 minutes.
- Add coconut milk, stir and simmer 10 minutes.
- Serve and enjoy.
