Carrot Ginger Soup

INGREDIENTS

  • 1 tbsp extra-virgin olive oil
  • 1 medium chopped yellow onions
  • 3 - 5 garlic cloves
  • 6 - 8 carrots chopped
  • 2 - 4 teaspoons grated fresh ginger (adjust to your liking)
  • 1/2 tsp turmeric powder
  • 2 cups vegetable broth
  • 1 tsp fresh thyme
  • 1 tsp all-purpose seasoning (Umami used in this recipe)
  • 1 1/2 cup water (preferably hot water)
  • Sea salt and black pepper to taste
  • 1 cup coconut milk
  • Garnish with fresh parsley

INSTRUCTIONS

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onions stirring occasionally, about 5 minutes.
  3. Add the garlic, ginger, carrots, all-purpose seasoning, thyme, salt and pepper to the pot and cook about 8 minutes more, stirring occasionally.
  4. Add water, cover and simmer about 40 minutes.
  5. Add coconut milk, stir and simmer 10 minutes.
  6. Serve and enjoy.
