No Bake Almond Cacao Energy Balls

Ingredients: 

  • 1 cup almonds
  • ½ cup of oats (optional)
  • 1 ½ medjool dates (optional: soak for 15 mins before to soften)
  • 4 tablespoons raw cacao powder or cacao nibs
  • 2 ½ tablespoons almond butter
  • 1-2 tablespoons coconut oil

INSTRUCTIONS

  1. Place the almonds in the food processor and pulse for about 3-5 seconds
  2. Add the medjool dates and coconut oil and pulse until it’s fully mixed.
  3. Add the almond butter and cacao and then mix again in the food processor.
  4. Take a tablespoon of the mixture and roll into a ball. Continue doing this until the mixture has finished.
  5. Place the rolled balls into the freezer for around 1 hour, then remove and store in an airtight container in the fridge.
