Crunch Salad
Ingredients:
- 1 cup shredded red cabbage
- 1/2 cup
- shredded carrots / 2 handfuls
- 1 cup frozen corn, defrosted
- 1 cup frozen brocolli, defrosted
- 1/2 avocado
- 1/4-1/2 cup of red pepper strips
- 2 scallions diced
Dressing:
- 2 tablespoons rice vinegar,
- 2 tablespoons light soy sauce (or use a gluten-free alternative)
- ¼ teaspoon red pepper flakes
- Garlic and ginger to taste (you can use fresh or powdered)
Directions:
Add all of the ingredients to a bowl with dressing and toss. Enjoy!
