Crunch Salad

Ingredients:

  • 1 cup shredded red cabbage
  • 1/2 cup
  •  shredded carrots / 2 handfuls 
  • 1 cup frozen corn, defrosted 
  • 1 cup frozen brocolli, defrosted
  • 1/2 avocado
  • 1/4-1/2 cup of red pepper strips
  • 2 scallions diced 

Dressing:

  • 2 tablespoons rice vinegar, 
  • 2 tablespoons light soy sauce (or use a gluten-free alternative)
  • ¼ teaspoon red pepper flakes
  • Garlic and ginger to taste (you can use fresh or powdered)

Directions:

Add all of the ingredients to a bowl with dressing and toss. Enjoy!
