Corn Salad
Ingredients:
- 2 cups corn
- ½ English cucumber
- ¼ cup chopped red onion
- ½ red bell peppers
- Lime juice or apple cider vinegar
- Cilantro or parsley
- Garlic powder
- Onion powder
- Smoked paprika
Directions:
- If using fresh corn, shuck and clean the corn. If using frozen corn, thaw it according to package instructions.
- Chop the cucumber, red onion, and bell pepper and add them to the corn.
- Squeeze the juice of a lime over the vegetables, or add a splash of apple cider vinegar. Toss everything together until well combined.
- Taste the salad and adjust the seasoning as needed.
- Garnish the salad with chopped cilantro or parsley and serve. Enjoy!
