Corn Salad

Ingredients:

  • 2 cups corn
  • ½ English cucumber
  • ¼ cup chopped red onion
  • ½ red bell peppers
  • Lime juice or apple cider vinegar
  • Cilantro or parsley
  • Garlic powder
  • Onion powder
  • Smoked paprika

Directions:

  1. If using fresh corn, shuck and clean the corn. If using frozen corn, thaw it according to package instructions.
  2. Chop the cucumber, red onion, and bell pepper and add them to the corn.
  3. Squeeze the juice of a lime over the vegetables, or add a splash of apple cider vinegar. Toss everything together until well combined.
  4. Taste the salad and adjust the seasoning as needed. 
  5. Garnish the salad with chopped cilantro or parsley and serve. Enjoy!
